CHICKEN SALAD RECIPE AND RUNNING

Today’s Workout:

Ran  Outside: 5 miles/ 46 min: recovery pace

This morning I drove to a trail about 15 minutes from my house to switch up the scenery a little bit. It was a really nice run. The weather was perfect and the views were incredible. I ran without music again. I never thought I would make the switch but I actually haven’t run with music since before the Charlottesville half marathon. I enjoy it.  I attentively focus on my form and my pace a lot better than when I have music to distract me. Don’t get me wrong, running with music can definitely get me through runs easier but I like being challenged to focus. I like having a clear mind and coming to the Lord in prayer during these runs. That takes focus, too. I love running. It has become such an amazing gift in my life. I never expected this to happen but it did and I love it. I continuously find myself wanting to improve on something and I feel like I learn something new every day. Running is my thing. I don’t want to take it for granted.  I want to be thankful for each and every run that the Lord gives me!  I love the running community and the encouragement and love that comes with it. Thank you to all of you, other runners- you give me that extra push when I need it!

The other day I had lunch at my brother’s house and my sister-in-law made chicken salad lettuce wraps. They were so yummy and light! I have the recipe for you if you are interested in a super quick, tasty meal. I am filling up my recipe book as much as I can before I move in 2 weeks!

Ingredients:

1-2 lbs of chicken breasts -boiled

3/4 cup light mayonnaise

1/2 cup grapes cut up

1/2 cup chopped walnuts

1/4 cup sweet gherkins

a pinch of salt and pepper

Romaine leaves

After you have boiled the chicken shred it with a fork and add all of the ingredients. Mix well. Add onto the romaine leaves and eat! Simple as that! My brother ate his on bread but if you want to feel healthier I recommend eating it on the romaine. I took about 2o minutes to prep and cook and this recipe served 4 of us! I hope you enjoy it as much as I did!

She served the chicken salad lettuce wraps with carrots and wasabi almonds. It was my first time trying wasabi almonds- they have a great kick to them. Quite tasty!

I ate mine with a Cool Lime Refresher from Starbucks. It my new favorite spring/summer drink for now!
